Fill two small glasses with a layer of cookie crumble and chopped nuts. Keep a third of the cookie crumble separate, for finishing touches.
Mix the Pa’lais Nature with lemon zest and lemon juice. Taste and add maple syrup if needed.
Spread the lemon spread over the cookies.
Coarsely crush the raspberries and spread over the lemon spread.
Allow to set and cool in the refrigerator for 15-30 min.
Finish with the remaining cookie crumble just before serving.
Also delicious with speculaas cookies or chocolate chip cookies.

25 gr mixed nuts, coarsely chopped
1 cup of Pa’lais Nature
Zest of 1/2 organic lemon + extra
Juice of 1/2 lemon + extra
50 grams raspberries (fresh or frozen)
