Breakfast bagel with scrambled tofu, plant-based bacon and mashed avocado

Breakfast bagel with scrambled tofu, plant-based bacon and mashed avocado

Step 1

Bake the bagels according to the instructions on the packaging.

Step 2

Heat a pan with oil on medium-high heat.

Step 3

Crumble the tofu over the pan and fry for about two minutes.

Step 4

Add soy sauce, turmeric, noble yeast flakes and a dash of water. Season with salt and pepper and stir well until all the tofu is yellow and seasoned. Finally, stir in the chives.

Step 5

In a second pan, fry the vegan bacon strips.

Step 6

Crush the avocado and season with salt and pepper.

Step 7

Cover the bottom half of the bagel with a generous spoonful of Pa’lais Nature. Season with pepper and chives. Then divide the tofu and vegan bacon strips over the bagel, spoon some avocado puree over the top and finish off with leafy greens and cress.

Tip 1:

Also delicious with fried mushrooms instead of bacon.

Tip 2:

Season the tofu scramble with kala namak instead of plain salt for a real eggy taste.

1 packet of tofu (250 grams)

1 tbsp of soy sauce

1/4 tbsp turmeric powder

1 tbsp noble yeast flakes

1 tbsp chives + extra as finishing touch

150 grams vegan bacon strips

1 pot of Pa’lais Nature

1 avocado

Handful of fine leafy greens

Cress

Olive oil, pepper and salt
