Chickpea blini’s with Pa’lais Cucumber & Chives and herby cucumber salad

Step 1

Mix the first 6 ingredients for the blinis.

Step 2

Then add 100 ml of water and stir vigorously for a few seconds until it starts to set. Add a little more water if the batter seems too firm.

Step 3

Finally, add the vinegar, mix briefly, then let the batter sit for a minute while heating a large pan with oil over medium heat.

Step 4

Spoon 1 tablespoon of batter into the pan and make a blini of 5 to 6 cm in diameter. Repeat until the pan is full. Turn the blini after 1 minute and fry the other side until golden brown as well.

Step 5

Repeat with the rest of the batter.

Step 6

Mix the cucumber ribbons with the fresh herbs, wine vinegar and olive oil. Season with pepper.

Step 7

Spread some Pa’lais Cucumber & Chives on each blini and spread some cucumber salad on top.

Step 8

Finish with some fresh herbs and sea salt.

Tip 1:

Do not break the bubbles that form in the batter! These provide lightness in the blinis.

Tip 2:

Tasty and extra beautiful with some seaweed pearls (vegan caviar) or finely chopped red onion on top.

Pa’lais Cucumber & Chives

Ingredients

120 grams chickpea flour

1/2 tsp (herb) salt

1/2 tsp baking powder

1/4 tsp baking soda

2 handfuls of fresh herbs (chives, dill, mint,..), chopped

Black pepper

100 to 125 ml cold water

1/2 tbsp wine vinegar

For the topping:

½ cucumber (without the seeds), in fine ribbons

2 handfuls of fresh herbs (chives, dill, mint,..), chopped

1/2 tbsp wine vinegar

1/2 tbsp olive oil

1 jar of Pa’lais Cucumber & Chives

Black pepper & salt
