Loaded nachos with minced seitan, tomato-jalapeno salsa and cheesy sauce

Loaded nachos with minced seitan, tomato-jalapeno salsa and cheesy sauce

Step 1

Preheat the oven to 200°.

Step 2

Fry the minced seitan in some oil over medium heat. Season with tex-mex spices, salt and pepper.

Step 3

Heat the Pasta Sauce in a saucepan and add the vegan cheddar. Let the cheddar melt while stirring. If necessary, beat with a whisk to make a homogeneous whole.

Step 4

Place half of the nachos in an ovenproof dish. Divide half of the Pasta Sauce over the nachos and spoon half of the minced seitan over it. Repeat with a second layer of nachos, Pasta Sauce and minced seitan.

Step 5

Place in the oven for 10 minutes or until the corners of the nachos start to brown.

Step 6

Meanwhile, make the salsa: mix the tomatoes with the jalapeno and onion. Mix with the juice of 0.5 to 1 lime and a spoonful of olive oil. Stir in some of the coriander and mint and season with salt and pepper.

Step 7

Finish the warm nacho dish with the salsa, the rest of the fresh herbs, salt and pepper. Serve immediately!

Tip 1

Also delicious with some avocado cubes or a spoonful of guacamole on top.

Tip 2

You can replace the nachos with sweet potato fries.
